Diary Free Mushroom and Quinoa Soup 🥄

The heater in our apartment decided to break on the first cold California day of fall (50 degrees 😅). So a nice hot soup was 100% necessary. We wanted it nice and hearty so came up with this incredible recipe!

Ingredients:
– 3 tbsp olive oil
– 5 cloves mined garlic
– 2 chopped leeks
– 1/2 chopped yellow onion
– 4-5 cup mushrooms (mix of portobello, crimini & shiitake)
– 2/3 cup red quinoa
– 2 tbsp GF flour
– 1 can coconut milk
– 6 cups chicken broth (could make vegan and use veggie)
– 2 tsp parsley & dash of red pepper flakes
– s&p to taste
– lemon wedges & fresh parsley to top your bowl!

How to:
Place olive oil, in a pot on medium. When it’s heated, throw in onion, garlic, leeks and mushrooms. Cook for 5-8 min until fragrant, stirring frequently. Add flour, and stir so all mushrooms are coated. Cook~2 more min, then add coconut milk, broth & quinoa. Add parsley and s&p to taste. Bring to a boil. Once boiling, bring heat down and simmer for 20 min. Let sit for ~10 min before serving. Once in a bowl top with lemon juice, s&p, and parsley.
